Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Cooling- beans 87F ( 2:00-3:30 ), cooling -pork butt 77F ( 2:00-3:30 ). Operator placed beans and pork in walk in cooler.
