Per operator the fish was cut 2 hours prior. Operator iced the fish for rapid cooling. Corrective action taken. In the walk in cooler Chicken (47F - Cold Holding); Beef (47F - Cold Holding); cooked rice (48F - Cold Holding). Operator blocked open the freezer door. Corrective action taken.
