Person in charge unable to answer basic Food Code questions pertaining to safe operation of establishment. Observed CFM unable to calibrated the thermometer and did not know the proper concentration of sanitizer solution.
In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. Observed tong handle inside cheese. Operator stored tongs properly.
Mobile food dispensing vehicle license number not permanently affixed on the side of the unit in figures at least 2 inches high and in contrasting colors from the background of the vehicle.
