Operator will reheat to 165F° for hot holding
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Hot table 4; Callaloo (98F at 1220pm to 85F at 1257pm - Heated Cooling since 1130am) cooling in room temperature while covered. Food will not cool down in time while cooling in room temperature. Operator moved to reach in cooler to continue cooling process.
