Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At arrival operator stated that the walk-in cooler was not operating and that the repairman was onsite working on cooler. The foods were being held in a refrigerated truck box outside until the cooler could maintain temp. Inspector observed ham 2qts (51F - Cold Holding); chicken 2cups (52F - Cold Holding) inside the walk-in, operator stated the foods were placed there at 1100am. Foods must be used or discarded by300pm.
