Pizza make bar - top - cheese 45/46, sauce 46, ham 44F / Bottom cheese 50F Per manager and staff make bar loaded this AM. TCS food out of temperature less than 4 hrs. Advised operator to move all TCS food to secondary cold hold unit to facilitate rapid cooling.
