Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Observed : on the kitchen pizza speed rack: pizzas made with no tracking timer. Cheese pizzas made at 11 am and pepperoni pizzas made at 11:30 am. Timers were started with the understanding that at the end of the original time made 4 hours, pizzas would be discarded.
No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Observed : pizza Maker B, lacks any training certificate, and the Employee Reporting form has not been filled out. emailed a blank copy.
Records/documents for required employee training do not contain all of the required information. Observed : lack of date of birth on one certificate. ALSO, lack of: training Certified Food Manager name, signature and date of signing.
