Was not able to observe approved food handlers training for any employees.

Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed 3 compartment sink quaternary levels at 0ppm. Operator replaced it with fresh sanitizer and remeasured it at 200ppm quaternary.
