Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Dessert cooler: rice pudding (45F - Cold Holding); cheesecake (46F - Cold Holding). Food was relocated to the walk in cooler. Flip top cooler: cut tomatoes (48F - Cold Holding); cut lettuce (50F - Cold Holding); hummus (53F - Cold Holding); tzatziki (48F - Cold Holding); spinach pie (51F - Cold Holding); feta (50F - Cold Holding) food has been rotated throughout the day. Most have been in the cooler for less than 4 hours. Items inside cooler were previously in the walk in around 4 hours ago. All temperatures in the walk in were below 41F. Operator relocated all foods back to walk in. Discontinue use of cooler or use ice baths to maintain temperatures. Discussed with owner.
