Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Raw shrimp held in elevated pan in small flip top reach in cooler at 48F. Per employee, shrimp placed in unit approximately 45 minutes prior. Shrimp placed in reach in freezer and approximately 15 minutes later, shrimp at 41F.
