No time mark on pizza slices and garlic in oil stored on cook line. Per operator, items have been held for less than 1 hour. Operator applied appropriate time mark.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. chicken wings (89F - Cooling for 1/2 hour at 3:30, 85F at 4:00) cooling in individual portioned seal bags in deep filled bin in walk in cooler. Operator reorganized.
