Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In glass door cooler - cooked duck (44F - Cold Holding), operator purchased 2 days ago, moved to freezer.

Unwashed fruits/vegetables stored with ready-to-eat food. In black vertical freezer - unwashed bell peppers and broccoli over cut bell peppers and onions, operator rearranged cooler.

Dishmachine ran 2 times 0ppm. Operator primed dish machine twice, both readings 0ppm. Operator set up 3 compartment sink. Discontinue use of dishmachine until dishmachine is sanitizing properly.
