Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. sliced Swiss cheese (50F - Cold Holding); sliced pepper jack cheese (51F - Cold Holding) in top of flip top reach-in cooler next to grill. Observed sliced cheeses double panned above chill line of cooler. Operator removed cheese to place in bottom of cooler to chill.
Food-contact surface soiled with food debris, mold-like substance or slime. Cutting board on reach-in cooler next to grill soiled/ stained.
Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Multiple employees food safety certificates expired within week ago. Operator stated he will have then complete training soon.
