Clean, single-use gloves not handled in a sanitary manner. Observed employee blow into single use glove before putting glove on for food prep. Educated employee on proper use of gloves. Employee washed hands and changed gloves.

Per operator, food not prepped or portioned today; food stored in cooler for approximately 2 hours. Operator put foods inside reach in freezer to quick chill. Sliced ham 41F and sliced turkey 43F at 9:22am.
Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Observed Sanitizer Bucket (Chlorine 200ppm) at front counter area. Operator discarded and remade sanitizer to 100ppm.
Wet wiping cloth not stored in sanitizing solution between uses. Observed wet wiping cloth stored next to ice bin at front counter area. Operator removed.
