Observed reheating in the Hot Holding Unit: beans 82F, chicken 131F, Beef 128F, Meatloaf 153F, Queso 101F, Chili 90F, Shredded chicken 109F, Beef sausage 129F. The operator had placed all the food items at 8:45am. The temperatures of food items were taken at 11:30am. Operator discarded the food items. The items wet not reheated within the 2 hour time frame to 165F.
Time/temperature control for safety food reheated for hot holding not reaching 165 degrees Fahrenheit for 15 seconds within 2 hours. Observed reheating in the Hot Holding Unit: beans 82F, chicken 131F, Beef 128F, Meatloaf 153F, Queso 101F, Chili 90F, Shredded chicken 109F, Beef sausage 129F. The operator had placed all the food items at 8:45am. The temperatures of food items were taken at 11:30am. Operator discarded the food items. The items wet not reheated within the 2 hour time frame.

Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. Observed no Vomit and Diarrhea Cleaning Written Procedure. Emailed the operator the written procedure which was printed during inspection.

Observed document not completed with no signatures. Operator had all the employees in the establishment signed the document.
