Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed 0ppm on test strip due to empty container. Operator replaced with full container and corrected to 50ppm.
Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw shrimp over southwest egg rolls at Reach in Drawers. Operator switched the food items.

Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed fish in reduced oxygen packaging at Walk in Cooler. Operator removed the fish from reduced oxygen packaging.
Equipment and utensils not properly air-dried - wet nesting. Observed multiple wet containers stacked at dish shelf. Educated the operator of not stacking until air dry.

Establishment increased seating without providing written approval from the local fire authority and wastewater provider. The plans are approved for the originally licensed number of seats only. DBPR cannot record the proposed increase from the previously maximum seating level of 20 to the proposed 216 without proof of local fire and plumbing authority approval in the proposed increase.
