Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine chlorine 0ppm. Manager primed machine, still 0ppm. Manager adjusted the sanitizer lines and primed again, then 50ppm. Inspector instructed manager to resanitize all dishes that have been sanitized using the dish machine today.
Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Package of raw pork stored on shelf directly above pan containing homemade frosting inside reach-in freezer at cookline. Manager moved the frosting away during this inspection.
Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Pan containing raw ground sausage stored on shelf directly above pan containing raw shell eggs inside reach-in cooler at cookline. Manager moved the raw sausage away from the shell eggs during this inspection.
Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Several bowls stored not inverted on top of baking oven.

In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Handles of scoops stored down inside flour and brown sugar inside bins in rear baking room.
Single-service articles improperly stored. Package of paper towels stored directly on floor inside storage closet. Manager removed the towels from thr floor during this inspection.
A return visit. The problems from the previous inspection had been dealt with.

Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee at cookline handled a Cuban sandwich with bare hands, cutting it and placing it into a foam container. Inspector had employee place the sandwich back onto the grill. Sandwich reheated to 176F.
