Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. beef empanadas (125F) for 1.5 hours reheated to 165 hot holding; chicken kabobs (125F - Hot Holding) owner tossed the chicken kabobs.
Hot holding unit not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Small hot holding unit not keeping foods above 135f hot holding. Owner turned dial up.
