Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Quaternary sanitizer spray bottle testing at 500+ PPM. Inspector assisted employee in diluting chemical with water. Quaternary sanitizer is now testing at 200 PPM.
Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed ziplock bags of sliced cheese and hot dogs not date marked inside double door reach in cooler in preparation area.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. Emailed manager DBPR Clean-Up of Vomiting and Diarrheal Events form.
Handwash sink not accessible for employee use at all times. Observed a plastic soda organizer tray placed on top of the hand sink in the preparation area, along with various items store on the floor such as boxes, towels, and soda can cases, obstructing access to the sink.
Manager or person in charge lacking proof of food manager certification. Spoke to manager over the phone and CFM certificate could not be provided.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. No quaternary chemical test strips observed.
No soap provided at handwash sink. Missing at hand sink next to air fryers and ice machine in food preparation area. Employee stocked soap dispenser with soap.
Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Ice machine interior in front counter area heavily soiled with black mold like substance.
Carbon dioxide/helium tanks not adequately secured. Two CO2 tanks not secured in preparation area.
