Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine tested at 0PPM. Manager advised employee to re-run unit multiple times to ensure chemical sanitizer is reaching the unit by changing chlorine buckets. Retested at 50ppm
Equipment and utensils not properly air-dried - wet nesting. Wet nesting observed on stacked metal pans in a manner that will not allow them to properly air dry.
Floor soiled/has accumulation of debris. Floor soiled behind flat top grills. Ceiling vents soiled.

Handwash sink used for purposes other than handwashing. Observed food debris in handwash sink next to ice machine. Discussed with operator about handwash sink for hand washing only.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Employee drink stored on prep table in kitchen. Operator removed drink.
In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Soda gun laying on ice in ice bin. Operator moved soda gun to holster.

Ran dish machine multiple times, tested 0ppm. Operator worked on the dish machine at time of inspection, ran dish machine again, tested 50ppm.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Quat sanitizer tested 500+ ppm in all sanitizing buckets. Quat dispenser at three-compartments sink tested 200ppm. Quat dispenser at mop sink needs re calibration. Operator remade sanitizing buckets, tested 200ppm.
Handwash sink used for purposes other than handwashing. Employee filled squeeze bottle with water in handwash sink next to ice machine at kitchen. Discussed with operator about handwash sink for handwash only.
Hot water supply not maintained during peak periods. Handwash sink at wait station next to bar.
