Ran dish machine and tested 0ppm. Operator primed sanitizer manually for multiple, ran dish machine again and tested 100ppm.
Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. three-compartments sink at bar tested 100ppm. Operator reset sanitizer, tested 200ppm.
