Food-contact surface soiled with food debris, mold-like substance or slime. Observed : a soda gun at the drink station next to the bar. Soda gun soiled with build up. This was cleaned by staff.
Worn, torn and/or soiled floors. Observed : build up of drooped food, utensils and debris: under the drain board for the dish wash machine, between/behind the cook line and prep line, and under dry goods shelves.

Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed : cook line staff touch their apron with the left hand multiple times. This was brought to their attention to stop that behavior.
Toxic substance/chemical improperly stored. Observed : Oasis multi-quat spray stored next to tea pitchers on the wait station line. ALSO, Oasis stored next to a rack of clean glasses at the bar end of the wait line. These sprays were moved to cleaning,

Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Observed : the smoke butter mix lacking a time stamp. An adjusted time mark was given, for the rest of the 3.5 hours.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed : a green cutting board on the prep line and a white cutting board on the cook line that are stained. ALSO, the soda guns have build up. And the tea spouts have tea residue build up.
Records/documents for required employee training do not contain all of the required information. Observed : date of birth missing on 1 training page.
No handwashing sign provided at a hand sink used by food employees. Observed the men,s restroom lacking a sign to direct employees to wash their hands.
A return visit. The problems from the previous inspection had been dealt with.

Employee touched soiled apron/clothes and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed: cook line staff adjust hat with gloves left hand while opening a reach-in cooler with the right hand, then back to the cook line handling spatulas, no hand wash. Manager instructed hands to be washed and gloves changed. Staff complied.

Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Observed: in the cook line reach-in cooler 2 door: 2 door reach-in cooler: beef 46,48,48,47, lobster 48°. There was an inverted baking pan on the top shelf, supported by a bowl, to divert dripping water.
Employee with no beard guard/restraint while engaging in food preparation. Observed: lack of beard guards on the prep and cook line.
Equipment in poor repair. Observed the lower gasket on the walk-in cooler has come loose. ALSO, the hot potatoes drawers have compromised gaskets.
Hood filter missing from automatic fire suppression/exhaust system. Observed the lower 1 filter missing on the cook line.
In-use scoop stored on soiled surface between uses. Observed: the scoop in the mini crock pot was being store in soiled water, wait staff line.
Standing water in bottom of reach-in-cooler. Observed: at the bar, the glass door keg cooler has standing water in it.
Worn, torn and/or soiled floors. Observed an accumulation of debris under the equipment on the bar floor.

Air gap between water supply inlet and flood rim of equipment/sink is less than one inch. Observed: the soft foods dipper well had no air gap. Staff attempted to secure it 1 inch above flood rim.
In-use tongs stored on equipment door handle between uses. Observed: tongs on the cook line protrude into the walkway and are set to touch aprons while working at that station. They were adjusted 2x.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed: the hood filters over the cook line have build up of grease. ALSO, the bump bars and tong handles have an accumulation of food debris.
Standing water in bottom of reach-in-cooler. Observed: in the keg cooler at the bar, standing water.
Worn, torn and/or soiled floors/carpeting. Observed: the far end of the bar area floor has an accumulation of debris.

Toxic substance/chemical improperly stored. Observed a spray bottle stored with the metal pitchers on the wait staff line. The liquid in it was blue. This was moved to cleaning.
Records/documents for required employee training do not contain all of the required information. Observed lack of trainers sign off on the Darden employee training sheets. These were signed off during the inspection.
Floor area(s) covered with standing water. Observed: standing water under the dish wash machine.
In-use tongs stored on equipment door handle between uses. Observed: tongs hanging from the cook line equipment protruding into the walkway. These were adjusted.

Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed: cook staff open refrigerated drawer, pick up raw chicken with tongs that had been laying in the pan of raw chicken, and then touch cook line handles for burger press. The manager then had the staff member remove gloves and wash up before putting gloves back on. The tongs were moved to a clean, empty pan.
Toxic substance/chemical improperly stored. Observed: blue spray stored next to bottles of alcohol. The cleaner was moved to cleaning.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed: the far soda gun with foreign debris in the cone and on the diffuser. This was removed for cleaning.
Cove molding at floor/wall juncture broken/missing. Observed broken cove mounding at the corner by the dish wash machine.
Floor area(s) covered with standing water. Observed: on the floor in front of the dish wash machine, standing water.
In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed: an ice cream scoop in standing 67F water. The water was emptied, and a fresh container was brought out to hold the scoop.

Hood filter missing from automatic fire suppression/exhaust system. Observed: 1 hood filter missing. This was retrieved and replaced.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed the silver lip over the ice bin door has foreign debris on it. This was wiped clean.
Standing water in bottom of reach-in-cooler. Observed the long reach-in cooler at the bar has an accumulation of water in it.
