Manager spoke to employee regarding the touching of raw salmon without removing gloves and washing hands. Employee removed gloves and washed hands properly.

Observed Cooked wings (45F - Cold Holding); Spinach dip (45F Cold Holding); Cooked Rice (46F - Cold Holding); raw pork (45F - Cold Holding); House made blue cheese (45F - Cold Holding) in walk in cooler. Manager stated some items were out for restock and may have had door open that morning. Cooler has an ambient temperature of 42F. Manager placed ice on all items listed.
Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. Observed a splitter added to mop sink without a back flow device on non chemical side ( hose attached). Inspector viewed that back flow device added to chemical side of splitter that is not needed due to the internal back flow in the chemical station. Manager removed the back flow from chemical side and installed on non chemical side of splitter.
