Time/temperature control for safety food thawed in an improper manner. Observed raw chicken thawing in standing water in back prep sink. Person in charge turned on cold running water.
Unclean building components, attachments or fixtures. Observed grease build up on fixture attaching from top of broiler oven to hood filters.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In steam table on server side of line, loaded potato soup (130F - Hot Holding); melted butter (115F - Hot Holding). Manager stated products have been in warmer for approximately 1 hour and turned warmer up to being up temperature. Checked temperature approximately 30 minutes later and melted butter at 135F and potato soup all used.
Floor, wall and/or ceiling soiled/has accumulation of debris. Floors under server line where soda machines are soiled. Also, floor under reach in coolers and cooking equipment on cook line soiled with food debris. Also, floor under ice well near bar and to go station soiled with black build up. Also, at bar floor under reach in coolers and 3 compartment sink have black build up. Also, wall behind cook line has build up of grease/food debris. Also, ceiling vents in men's and women's restroom have build up of dust.
Interior of oven/microwave has accumulation of black substance/grease/food debris. Interior of microwave near grill soiled with food debris.

All items retemp at or below 41F.
