Manager stated that food training only completed during orientation. Inspector advised that employee food training is valid for 3 years.

Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishmachine uses peroxyoctanic acid as a sanitizer. Test strips showing sanitizer solution is at 0ppm. Air bubbles were observed inside sanitizer line. Manager set up the three compartment sink for manual sanitation and called service company
