In the cooking line, maketable: shredded cheese 52F, sour cream 53F, pico 54F, diced tomatoes 56F; lowboy: shredded cheese 59F at 2:30pm, in maketable/lowboy since 11:00am. At the time of inspection, manager placed items in freezer for rapid cooling.
