Operator stated employee had milk out to make coffees during lunch. Operator placed milk in nearby reach-in cooler. Also, cream sauce w/ milk (66F - Cold Holding) at front line at display case. Observed sauce on very little melted ice. Discussed with operator to have sauce surrounded by ice to chill cream sauce.
