Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In a pan on top of the steam table fried chicken (122F - Hot Holding). Per operator the chicken was cooked two hours prior. Chicken moved into pans inside the steam table.
