Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishmachine at 0 ppm. Operator stated they have a service call in to repair machine. Dishmachine observed still in use at time of inspection. Operator had employee start to set up three compartment sink with approved sanitizer.
Raw animal food stored over/not properly separated from ready-to-eat food. Raw shell eggs stored over ready-to-eat cut leafy greens in reach-in cooler across from cook line. Operator moved and stored correctly.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Green Salsa (47F - Cold Holding); Birria (47F - Cold Holding) in reach-in cooler in wait station area. Operator stated temperatures were taken this morning. Operator had employee moved products to another cooler.
Food-contact surface soiled with food debris, mold-like substance or slime. Can opener blade soiled with an accumulation of food debris. Operator removed to have cleaned and sanitized.
Handwash sink not accessible for employee use at all times. Handwash sink to the left of the cook line blocked by bus boxes. Operator removed.
No paper towels or mechanical hand drying device provided at handwash sink in dish pit area and at one handwash sink on cook line. Employees replaced paper towels.
No sanitizer of any kind available for warewashing. Only use single-service items to serve food to customers until sanitizer is available for warewashing. Operator purchased approved sanitizer by the end of inspection.
2 dead roaches on premises in women's restroom and in kitchen area in front of handwash sink. Operator started to clean and sanitized area.
