Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. A container of raw shell eggs (59F ambient - Cold Holding) stored on prep table at cook line. Operator moved to reach-in cooler.
Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink. Hot water switch loosened and unable to turn on water in hand wash sink at front service counter. Operator fixed switch and able to turned on hot water at time of inspection.
Covered waste receptacle not provided in women's bathroom. Unisex restroom.
In-use utensil stored in standing water less than 135 degrees Fahrenheit. Multiple ladles and spatulas stored in standing water temped 73 F on cook line. Operator discarded water at time of inspection.

Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employee entered prep area from storage area with gloves soiled with grease, then engaged to cut carrots. Discussed with operator, employee discarded soiled gloves, washed hands and replace new gloves.
Proof of required state approved employee training not available for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. 1 employee hired just over 60 days with no training. Operator has new training book on hand and ready to train new employee.
Hood ventilation system inadequate as evidenced by grease accumulation on walls/ceiling.
