Nonfood-grade bags used in direct contact with food. Prep table: raw chicken stored unwrapped inside Thank you carry out bags. Discussed with the operator the proper procedures, operator removed the raw chicken and placed is a clean container for storage.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Prep table in the kitchen: raw shell eggs (49F - Cold Holding). As per operator, placed on the table in-between orders. Inspector discussed the proper methods with the operator (Time as a Public health control option and place on ice). Operator placed the container with ice inside the reach in cooler.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Operator could not provide the chlorine test kit. Observed operator ordered days ago and awaiting delivery.
Accumulation of black/green mold-like substance in the interior of the ice machine at the front counter.

Raw animal food stored over or with unwashed produce. Dry storage area, stand up reach in cooler: raw chicken stored above cases of unwashed oranges. Discussed with the operator and provided the handout for the proper storage of food. Operator moved the raw chicken to another reach in cooler.
