Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. In the reach in cooler located in front of the grill at cook line observed raw beef skewers stored in the same container with raw chicken. Manager immediately removed raw beef from raw chicken. Manager stated that the beef skewers were going to be cooked to minimum chicken cooking temperature.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In a small steam table next to the flat grill in the kitchen observed cooked beef (98F - Hot Holding); cooked chicken (102F - Hot Holding), as per cook for about 2 hours, employee reheating the food.
No paper towels or mechanical hand drying device provided at handwash sink. At hand sink located in the kitchen, manager replaced paper towel.
Food not stored at least 6 inches off of the floor. In the walk in cooler observed a bucket with corn bags stored on the floor.
