Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Using bleach but they have a quaternary ammonia test kit.
Equipment and utensils not rinsed between washing and sanitizing. Operator washing with soap then rinsing in the sanitizer solution. Spoke to operator about the middle sink being just water and third sink being bleach water.
Food stored on floor. Jugs of juices and bottles of bbq sauce.
