Wash solution in spray type hot water sanitizing dishmachine not reaching proper temperature according to manufacturer's specifications. The high temperature machine was run multiple times, and the highest recorded temperature was 156.4 degrees. During the licensing inspection, the operator ran additional cycles, and the machine reached a temperature of 160.6 degrees.
