Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Flip top cooler: crema (sour cream) (51F - Cold Holding) Observed in pan, in squirt bottle filled above fill line of pan. Per operator, not prepared or portioned today. Per operator, out of temperature for approximately 30 minutes. Operator placed squirt bottle in lower portion of cooler.
Food-contact surface soiled with food debris, mold-like substance or slime. Can opener blade soiled with an accumulation of food debris. Operator removed to be cleaned and sanitized.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. For chlorine sanitizer at dish machine. Not available at time of inspection.
