Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Chicken wings 46F inside the reach in cooler next to the marinated near the dishwasher area. Operator put the product in the freezer.
No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Provided the operator another copy. Operator had the employees to read and sign the agreement.
Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. 500 ppm. Operator discarded the product and made it to the right 200:ppm.
Wood food-contact surface not properly sealed. Dry storage shelf in the hallway where Phase product is stored.
