Observed 2 Cooked briskets at 52F-56F in stand alone cooler at the end of cooking near back door. Sauce around brisket was at 48F. Chef stated the briskets were cooked at 9pm previous day and placed in stand alone cooler also that they normally cool briskets separately in shallow pans not together on top of each other. Briskets have been in stand alone cooler since. See stop Sale.
