Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed: cabbage salad 47°, and house red sauce 47°, both were in the Coke display drink cooler. Items were moved to the chest freezer, then to the flip top. Items made fresh daily after arrival.
Hot water at three-compartment sink does not reach 85 degrees Fahrenheit. Observed: the warmest water from the 3 compartment sink was 76°.
Mobile food dispensing vehicle license number not permanently affixed on the side of the unit in figures at least 2 inches high and in contrasting colors from the background of the vehicle. Observed: lack of prominently displayed 2" license on the service side of the Mobile food dispensing vehicle.
Working containers of food removed from original container not identified by common name. Observed: the bulk corn meal container is not labeled.
