In ice bath opposite cookline, raw chicken tenders (50-56F - Cold Holding) under no temperature or time control. Observed container sitting on top of ice. Per manager, chicken out of cooler approximately 1 hour. Manager moved chicken to reach in to rechill.
Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Employee bags hanging on dry goods rack by spice containers and above bagged rice.

In tabletop steam well, commercial mac and cheese (88-137F - Initial Reheating). Per person in charge, reheating since 11:00am. Employee moved food to flat top to completely reheat rapidly to 135F.

Frozen time/temperature control for safety food being slacked at room temperature is no longer frozen solid. Commercial mac and cheese on cart by reach in freezer at 36F. Employee began to transfer food to pans to place in fliptop cooler.
