Educated employee on proper handwashing procedures and employee washed hands and changed gloves.
Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Quaternary sanitizer in 3 compartment sink at 0 ppm. Operator corrected sanitizer to 200 ppm.
