Raw animal food stored over/not properly separated from ready-to-eat food. Observed case of raw hard shell eggs stored over a case of cabbage and green peppers in the walk in cooler, employee moved eggs to bottom shelf.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed manual can opener soiled with food debris.
Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed cucumber dill dressing made 12/20/25 and not date marked, employee date marked the dressing.
Ice buildup in reach-in freezer and/or walk-in freezer. Observed ice buildup around the walk in freezer door, owner stated work order has been placed.
In-use tongs stored on equipment door handle between uses. Observed two tongs on the handle of the flat grill, employee removed.
No conspicuously located ambient air temperature thermometer in holding unit. Observed no ambient thermometer in the reach in cooler in back storage area, owner placed thermometer in reach in cooler.
Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Observed the sanitize solution reading was at 0ppm, owner switched to chlorine solution, new reading 100ppm.

Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw hard shell eggs over pickles and gravy in the walk in cooler and raw ground beef over margarine, operator moved both.
No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels in the employees bathroom, operator replaced.
Packaged food not labeled as specified by law. Observed container of tzatziki sauce in the reach in cooler and gravy and pasta that are not labeled correctly in the walk in cooler, operator has placed labels on correctly.
Test kit for measuring the concentration of the sanitizing solution not used in accordance with the manufacturer's instructions or employee unaware of proper use. Observed the quaternary testing strips the color chart is faded and hard to read and the testing strips are expired from July 2022.
Cardboard used to line food-contact shelves. Observed in the reach in cooler in the kitchen, cardboard is used as a lining on the bottom, operator removed.
Cutting board has cut marks and is no longer cleanable. Observed cutting boards in the prep area are grooved.

Observed raw fish (67F - Cold Holding); cooked chicken (73F - Cold Holding); corned beef (46F - Cold Holding) in containers of standing water in sink water not running through and off items.
