Observed at top prep line cooler on the left crumbled sausage (53F - Cold Holding); cut tomatoes (48F - Cold Holding). Items have been out of temperature for approximately 2 hours. These items were brought from the walk in cooler, as per operator items not prepped or portioned today. Observed at reach in cooler at the end across from grill salmon (51F - Cold Holding); raw chicken (51F - Cold Holding) as per operator not prepped or portioned today. Items have been out of temperature for approximately 2 hours. Observed at reach in cooler below grill in pull out drawers cheese ravioli (46-47F - Cold Holding); cooked spaghetti (63F - Cold Holding); cooked rigatoni (63F - Cold Holding). As per operator items were not prepped or portioned today. Items have been out of temperature for approximately 2 hours. Operator removed items and placed in walk in cooler for quick chill.
No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels at hand washing sink up at front line prep. Operator replaced roll of paper towel.
Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed H Ortiz expired 4/18/2021.
