Manager stated they have been out for 1.5 hours and put back into cooler to bring down temperature.

Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink, wiping clothes and/or dishmachine. Manager has wrong test strips for wiping clothes and three compartment sink. Manager stated he will order for next truck. Inspector provided a few test strips to get they by.

Observed cook on cook line crack a raw shelled egg on the stove, he then left the stove area and moved to the prep area window where he grabbed a customers plate that had hash browns on it without taking his gloves off and washing his hands. Educated employee on proper hand washing procedures.
