Hot water sanitizing dishmachine final rinse not reaching proper temperature at manifold. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. High temperature dish machine only reaches surface temperature of 140.3 F after running multiple times. Sanitizing will take place in three compartment sink at 200 ppm quaternary until dish machine is fixed.
