Afterwards he continued cooking handling spatulas and utensils with same gloves. I immediately corrected employee and he he removed gloves and washed hands. Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. -diced turkey is cut, held in freezer then moved to reach-in cooler. Product requires some way to indicate when thawed to be sure refrigeration time does not exceed 7 days.
