Nonfood-grade containers used for food storage - direct contact with food. Observed pickles and 5 gallon joint compound container. Operator remove.

Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employee with gloves touching she eggs and without washing hand and changing gloves touching slice cheese and bread. Employee washed hand and changed gloves.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1)Observed at Flip top refrigerator; slice cheese (57F - Cold Holding); butter (72F - Cold Holding) du to being above the fill line. Operator removed the over filled food. 2 ) observed at Display refrigerator; cream cheese (48-50F - Cold Holding); tuna fish salad (48F - Cold Holding); nova salmon, ham, beef, turkey, assorted cheese (45F - Cold Holding). Operator stated cream cheese less then 4 hours, and cold cut some over night and moved all food to walk-in refrigerator. And defrost display refrigerator due to icing.
Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Operator labled time on all food when I got there for all food a time as public health control.
Probe thermometer not accurate within plus or minus 2 degrees Fahrenheit. Observed thermometer minus 12 degrees. Operator found new thermometer and we calibrated thermometer.
Food stored on floor. Observed plastic cases of water stored on floor in kitchen by 3 compartment sink.

Operator stated that food came from walkin refrigerator at 6. And will be discarded at 12 noon. And added the Flip top refrigerator to time as public health control
