Nonexempt fish offered raw or undercooked has not undergone proper parasite destruction. Fish must be fully cooked or discarded. Mahi and shrimp used in ceviche with only lime juice no parasite destruction. Chef states he will cook the shrimp and mahi to 145F then add it to lime juice.
