Observed quaternary sanitizer set up in spray bottle at 400ppm. Educated employee on correct 200ppm and supplied some test strips and color chart for immediate use.

Equipment and utensils not washed, rinsed and sanitized in the correct order in three-compartment sink. Do not use dishes/equipment not properly sanitized. Observed pans being washed in triple sink without sanitizer set up. Educated person in charge on proper sanitizing and set up third sink with quaternary solution at 300 ppm.
