Observed stand up glass door reach in cooler: butter (46F - Cold Holding); butter (49F - Cold Holding); vegan butter (64F - Cold Holding); half n half (67F - Cold Holding); ambient air (49F); quinoa salad (64F - Cooling) person in charge believes the door has been opened for 30 mins while portioning dressings. Person in charge put case of butter in flip-top cooler too cool and dressings on time control.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed tightly packed cut tomatoes, large deep bowl of house made hummus in walk-in cooler cooling. Ambient temperature of walk-in cooler is 45F due to large number of items cooling and staff opening door. Discussed with person in charge better options for cooling. Person in charge started having employee portion hummus in smaller containers.

Establishment has no approved Alternative Operating Procedure. Observed food employee bare hand contact vegetables while cutting the vegetables and feeding the vegetables into juicer. Juice is being served without any heat being applied. Spoke to employee immediately and they washed hands and placed gloves on. No visible contamination observed.
