For an undetermined amount of time. Operator immediately discarded. -cut lettuce, Mozzarella in 48F-50F less than 4hrs per operator. Cut lettuce placed in cooler for temperature recovery. Operator placed mozzarella in freezer for temperature recovery. Rechecked 1hr later temp of mozzarella was 41F.
